I used her Roasted tomato soup as base for sauce and shop-bought cherry tomatoes.&lt;br /&gt;No measurements this time, just feel free to add everything according to your taste.&lt;br /&gt;Put cherry tomatoes into ovenproof dish. Add unpeeled gloves of garlic, a few springs of thyme, rosemary, oregano and season with freshly ground pepper and salt. Add good splash of olive oil and roast in oven for 175 C degrees for at least 30-40 minutes or until tomatoes start bursting.&lt;br /&gt;Meanwhile cook the pasta (I used tagliatelle).&lt;br /&gt;Take the tomatoes out of the oven. Fish out springs of herbs (leave leaves in sauce). Squeeze the garlic out of its skin and mash everything slightly with fork. Add the cooked pasta. Crumble over some feta cheese (mozzarella would work very well too, but I didn't have any) and scatter some basil leaves. It was probably the very first one that I made myself when I was about 7 years old, without any help from my mum or granny. And many times after that... It is really easy to make and there is no need for special ingredients, everything is usually in the cupboard.&lt;br /&gt;As the time progressed I learnt a lot of new recipes and improved my cooking and baking skills, and I forgot about this one. But recently I have been in nostalgic mood, so I decided to make old school peach jelly cake. &lt;/div&gt;&lt;div align="justify"&gt;For &lt;span style="color:#cc9933;"&gt;cake &lt;/span&gt;you need:&lt;/div&gt;175g caster sugar&lt;br /&gt;175g soft unsalted butter&lt;br /&gt;3 eggs&lt;br /&gt;1 tbsp vanilla extract&lt;br /&gt;100ml buttermilk or thin yogurt&lt;br /&gt;200g self-rising flour&lt;br /&gt;&lt;div align="justify"&gt;Beat sugar and butter until smooth, then add eggs, one by one and beat. Add vanilla extract, buttermilk and flour and mix. Pour into lightly greased baking tin and bake in preheated oven for 175 C degrees for about 25-30 minutes. Let it cool.&lt;/div&gt;&lt;div align="justify"&gt;For &lt;span style="color:#cc9933;"&gt;jelly&lt;/span&gt; you can use any suitable &lt;span style="color:#cc9933;"&gt;fruit in syrup&lt;/span&gt; (in tin). The best is peach, apricot or blueberry. &lt;/div&gt;&lt;div align="justify"&gt;Take the fruit out of tin, slice and arrange onto the baked cake. Pour the syrup from tin into a measuring jug and top up with water so you have 500ml of liquid altogether. Pour the liquid in pan with 3 tbsp of caster sugar and bring it to boil. In the meantime dissolve 40g of custard powder in 100ml of water. When the liquid in pan is boiling, add the custard mixture. The jelly will thicken and become translucent. Take it from the heat and let it cool slightly. Don't forget to mix it from time to time to keep the texture smooth. Then pour onto cake with fruit and let it set for couple of hours. Particularly for those who - like me - love gardening. First edible results of your hard work are ready to be picked. &lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="color:#009900;"&gt;Rocket&lt;/span&gt; - strong peppery flavour is exceptionally good in salads, with pasta and last year I even made a batch of rocket and walnut pesto. &lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="color:#009900;"&gt;Chives&lt;/span&gt; - this is probably my favourite herb. It is always first to come, fine oniony flavour complements many savoury dishes. And its lovely flowers are very attractive for bee, too. That's what we want - to attract wild live to the garden to help pollinate. &lt;/div&gt;&lt;div align="justify"&gt;&lt;span style="color:#009900;"&gt;Lemon balm&lt;/span&gt; - in my opinion very undervalued herb. Tea infusion made from it is very refreshing. It is also great in mixtures - with sage to calm sore through and with mint to help digestion. I grew up as a city girl, the best way how to get fresh fruit and veg was to go to the farmers market. When we were looking for The House to buy for ourselves here in Ireland, the size and orientation of the garden was a major issue. Finally we managed to find good size South West facing garden. &lt;/div&gt;&lt;div align="justify"&gt;This is the third spring in our house. During the first two years we tried to figure out what plant where, which plant can survive a lot of rain and perhaps a lack of sunshine. I adopted very simple approach: if something could grow in my grandmother's garden in North of Slovakia, it will surely grow in the middle of Ireland. And if you have more time, get some fondue, roesti, sauerkraft, sausages or visit Michelin star restaurant.&lt;br /&gt;&lt;/div&gt;&lt;div align="justify"&gt;Last week I spent 4 days in Zurich using hospitality of my brother and his wife. As many of my trips, this one was food orientated as well. Oh yes, we went to Luzerne and Rigi (one of Alp's mountains) and explored Zurich's surroundings a bit. But most of all we just wanted to enjoy each others company - with such a distance between us it doesn't happen so often. &lt;/div&gt;&lt;div align="justify"&gt;So I had fondue in my brother's place, sausages with sauerkraft and roesti (potato pancake) in lovely gastropub just off Bahnhofstrasse and amazing experience in Michelin star restaurant &lt;a href="http://www.mesa-restaurant.ch/"&gt;mesa&lt;/a&gt;. Unfortunately, I didn't take any pictures in mesa Restaurant - I was far too busy admiring the food and guessing which cutlery to use for each dish ;-)&lt;/div&gt;&lt;div align="justify"&gt;As usually the important part came - what to bring home. If you are like me - love &lt;span style="color:#660000;"&gt;chocolate&lt;/span&gt; too much - you would be spoilt for choice in Zurich. I am sure I've seen at least 1000 different types of Easter Bunnies, I've never seen so many of them in my life. 5 of them found the way to my house too. &lt;/div&gt;&lt;div align="justify"&gt;The most famous &lt;span style="color:#660000;"&gt;chocolate&lt;/span&gt; place in Zurich is probably &lt;a href="http://www.spruengli.ch/index.php?lang=en"&gt;Sprungli&lt;/a&gt;. And I can see why. I was feeling like a kid in candy shop, literally and it took me a while to choose some gifts. I planned to be very active, to post more often on my blog, to loose some weight, to make more bead earrings, to try more recipes, to finish knitting my red jumper... After bad weather in January, I got really bad tonsillitis in February and all my great plans were long gone. I did not feel like eating or moving, let alone trying something new and do some stuff! When I eventually got a bit better I did try something new - in this case biscotti, which I will post later about.&lt;/div&gt;&lt;div align="justify"&gt;As my husband is working away for a while, we did not have a chance for Valentine dinner in time. He gave me very nice present - CDs and DVD of my favourite group &lt;a href="http://en.wikipedia.org/wiki/Zuzana_Navarov%C3%A1"&gt;Nerez&lt;/a&gt;. This music brings back the memories of my years at college... I was listening to it when I was preparing our belated Valentine dinner: prawn and rocket salad for starter, smoked salmon risotto for main and &lt;span style="color:#993300;"&gt;stracciatella torte&lt;/span&gt; as desert. &lt;/div&gt;&lt;div align="justify"&gt;It is the best way to prepare the sponge the day before and fill it after it has rested for good few hours. &lt;a href="http://en.wikipedia.org/wiki/Zuzana_Navarov%C3%A1"&gt;&lt;br /&gt;&lt;/a&gt;125g caster sugar&lt;/div&gt;&lt;div align="justify"&gt;3 eggs&lt;/div&gt;&lt;div align="justify"&gt;80g plain flour&lt;/div&gt;&lt;div align="justify"&gt;1/2 tsp baking powder&lt;/div&gt;&lt;div align="justify"&gt;2 tbsp cocoa&lt;/div&gt;&lt;div align="justify"&gt;Cream eggs and caster sugar in electric mixer until the mixture is pale and thick. Then sift in the flour, baking powder and cocoa and mix. Pour into buttered &lt;span style="color:#666666;"&gt;20cm &lt;/span&gt;baking tin and bake in preheated oven for 175 C for about 25-35 minutes or until the&lt;span style="color:#ff0000;"&gt; &lt;/span&gt;&lt;span style="color:#666666;"&gt;skewer&lt;/span&gt; comes out clean. Remove and leave to rest, preferably overnight.&lt;/div&gt;&lt;div align="justify"&gt;Cut horizontally in 3 and get the filling ready.&lt;br /&gt;Mix 250g ricotta, 50g icing sugar, 1 tbsp vanilla extract and 10g finely grated dark chocolate.&lt;br /&gt;Now you can assemble the cake. Put the first layer on the cake stand and moisten with few drops of liqueur. I used Creme &lt;span style="color:#666666;"&gt;de Cassis&lt;/span&gt;, but amaretto or &lt;span style="color:#666666;"&gt;some&lt;/span&gt; fruit liqueur would be nice too. Spread half of ricotta mixture over, cover with the second part of sponge, moisten with liqueur again, spread the rest of ricotta mixture and cover with the remaining sponge part. &lt;/div&gt;&lt;div align="justify"&gt;Then whip 250ml of whipping cream with 2-3 tbsp vanilla sugar (to your taste). Spread whipped cream on top and sides of torte and smooth it slightly. Grate dark chocolate over the whole cake. It is best to do it from about 30cm above cake as the chocolate distributes evenly. And she loves white chocolate. So when I was thinking about edible present for her, I decided to go for &lt;span style="color:#993300;"&gt;Sultana and white chocolate chips cookies.&lt;/span&gt; &lt;/div&gt;&lt;br /&gt;&lt;div align="justify"&gt;100g golden caster sugar&lt;/div&gt;&lt;div align="justify"&gt;100g butter&lt;br /&gt;1 egg&lt;/div&gt;&lt;div align="justify"&gt;1 tsp vanilla extract&lt;/div&gt;&lt;div align="justify"&gt;1 tbsp golden syrup&lt;/div&gt;&lt;div align="justify"&gt;200g plain flour + 1/2 tsp baking powder&lt;/div&gt;&lt;div align="justify"&gt;100g white chocolate chips (or chopped bar)&lt;/div&gt;&lt;div align="justify"&gt;50g sultanas&lt;/div&gt;&lt;br /&gt;&lt;div align="justify"&gt;&lt;/div&gt;&lt;p align="justify"&gt;Cream first 5 ingredients, then add flour with baking powder and finally chocolate and sultanas. Use ice-cream scoop to drop the mixture onto buttered baking sheet well apart. Bake in preheated oven for 175 degrees for 12-14 minutes. Our old coffee machine has been on strike for longer period of time, so we decided instead of having it repaired (again!) to go for new one. Frankly, decision has been made long time ago, we knew we wanted Kitchen Aid - sturdy and beautiful piece of appliance. Only price tag was putting us off, but I've done a bit of research on Internet and eventually found good e-shop with better price. The weather was so unbelievably awful - rain and strong winds, floods in many parts of the country. I planned to go to woods to find some nice twigs, pine cones and dried berries in the morning. Instead I stayed at home until afternoon, only stepped outside the house to chop ivy, holly, lavender and some greens in our garden. Lovely smell of Christmas spices filled the house to get me in the right mood.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;p align="center"&gt;&lt;img style="WIDTH: 400px; HEIGHT: 300px; CURSOR: hand" id="BLOGGER_PHOTO_ID_5417697171541863378" border="0" alt="" src="http://1.bp.blogspot.com/_NU2dCbqDAWo/Sy-G35JkK9I/AAAAAAAADUY/1mq6IROUCgc/s400/IMG_0649.JPG" /&gt;&lt;br /&gt;&lt;/p&gt;&lt;span style="color:#990000;"&gt;Apple gingerbread cake&lt;/span&gt;&lt;br /&gt;300g self rising flour&lt;br /&gt;2 eggs&lt;br /&gt;225g light brown caster sugar&lt;br /&gt;2 tbsp cocoa&lt;br /&gt;1 tbsp ground mix spices (cinnamon, ginger, cloves, nutmeg, cardamon)&lt;br /&gt;80g butter&lt;br /&gt;300g grated apples&lt;br /&gt;&lt;div align="justify"&gt;In the bowl cream sugar, butter and eggs, add flour with cocoa and spices, then fold apples in. Transfer into a tin lined with baking paper and bake in preheated oven for 175 degrees for about 30-40 minutes. &lt;/div&gt;&lt;div align="justify"&gt;Let it cool for a while and finish of with chocolate icing - place heatproof bowl over the pan with simmering water. In the bowl melt 100g chocolate with 40ml cream and stir. We had lots of green tomatoes from our garden - well, we did not have any greenhouse and Irish summer 2008 wasn't great. So inspired by the gift I made my own version of it and it turned out very well.&lt;/div&gt;&lt;div align="justify"&gt;This year having greenhouse we actually had some red and yellow tomatoes, but still, some of them didn't have a time to ripe, so again the same question came up: what to do with them? I remembered this jam and the one we tasted in France - apple and kiwi. So I decided to try a combination: &lt;span style="color:#009900;"&gt;green tomato, apple and kiwi jam&lt;/span&gt;. &lt;/div&gt;&lt;div align="justify"&gt;All the fruit was so beautifully green... Green is my favorite color, and that must be a reason why I like this green island so much... &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;p align="center"&gt;&lt;img id="BLOGGER_PHOTO_ID_5410369240728332178" style="WIDTH: 400px; CURSOR: hand; HEIGHT: 300px" alt="" src="http://3.bp.blogspot.com/_NU2dCbqDAWo/SxV-KLlP55I/AAAAAAAADTU/Ro-cnk0aOgg/s400/IMG_0505.jpg" border="0" /&gt;&lt;/p&gt;&lt;div&gt;Here is the easy recipe:&lt;/div&gt;&lt;div align="justify"&gt;Chop 0.5kg of green tomatoes, 0.5kg of peeled and cored Bramley apples and 0.5kg peeled kiwis. Put them into a big pot together with 1kg of caster sugar and juice of one lemon and bring it to boil. Then let it simmer for good while. For testing if your jam is ready put one spoon of jam onto cold plate and run your finger through. If gap stays there and doesn't close, jam is ready.&lt;/div&gt;&lt;div align="justify"&gt;Pour it into sterilised jars and screw the tops. Turn it upside down for few minutes just to seal. Weather wasn't so bad considering the time of year, so we decided to go for little trip up to the North. A bit of shopping, walking down the beaches (well, windy enough) and we ended up in lovely &lt;a href="http://www.dufferincoachinginn.com/"&gt;B&amp;amp;B&lt;/a&gt; in 200 years old building and dining pub right next to it. Mum ordered mussels (she never tried them before), but with strong doubts in her voice asked me: "Can we have something NORMAL as well - in case I don't like mussels?" Fish and chips with mushy peas was consider to be normal. The house was closed on Monday, but gardens (and cafe) were simply delightful. All the mature trees were showing off with colors - many shades of yellow, orange and bright red accompanied usual 40 shades of green. This is definitely the type of garden to visit in autumn. My German is very limited - consists of basic phrases and food vocabulary. This alows me to understand the list of ingrediences and some parts of method. &lt;/div&gt;&lt;div align="justify"&gt;It is a bit odd to find Linzer Torte (Linz is Austrian city) in local German book, but this particular recipe works really well comparing to those I used before.&lt;/div&gt;&lt;p align="center"&gt;&lt;a href="http://3.bp.blogspot.com/_NU2dCbqDAWo/Su3y7k0pHwI/AAAAAAAADPo/KzKCTdqT7d8/s1600-h/IMG_0353.jpg"&gt;&lt;img style="WIDTH: 320px; HEIGHT: 164px; CURSOR: hand" id="BLOGGER_PHOTO_ID_5399238633597771522" border="0" alt="" src="http://3.bp.blogspot.com/_NU2dCbqDAWo/Su3y7k0pHwI/AAAAAAAADPo/KzKCTdqT7d8/s320/IMG_0353.jpg" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;/p&gt;300g plain flour&lt;br /&gt;250g sugar&lt;br /&gt;150g grated hazelnuts (or almonds)&lt;br /&gt;zest from 1 lemon&lt;br /&gt;1 tsp grated cinnamon&lt;br /&gt;200g cold butter&lt;br /&gt;1 egg&lt;br /&gt;good quality raspberry jam (of redcurrant jelly)&lt;br /&gt;1 egg yolk for glazing&lt;br /&gt;&lt;br /&gt;&lt;div align="justify"&gt;Put flour, hazelnuts, lemon zest, sugar and cinnamon into a bowl and stir. Add cold butter cut into cubes. Mix with your hand quickly until it resembles coarse crumbles, then add an egg and mix. Form the ball and leave it rest in the fridge for 1 hour. &lt;/div&gt;&lt;div align="justify"&gt;Divide the ball into 2 parts. Roll the bigger part and place it in cake form - either round or oblong. Spread generous layer of jam over the pastry. Roll the smaller part, cut long stripes of pastry and arrange them on jam layer. Brush the pastry with egg yolk. Last week we even experienced some grass frost, so I decided to move chillies from the greenhouse into the house. Tomatoes are doing better on windowsill and the only vegetable left in the garden is carrots, kale, broccoli and some lettuce in polytunnel. &lt;/div&gt;&lt;div align="justify"&gt;On my way to &lt;a href="http://www.heritageireland.ie/en/midlandseastcoast/EmoCourt/"&gt;&lt;span style="color:#33cc00;"&gt;Emo Court &lt;/span&gt;&lt;/a&gt;two weeks ago I tasted some blackberries in hedges and was pleasantly surprised with lovely real taste. So on Saturday I took plastic box with me for cycling and got home with my fingers black and sticky and box almost full of nice blackberries. &lt;/div&gt;&lt;p align="center"&gt;&lt;a href="http://1.bp.blogspot.com/_NU2dCbqDAWo/St4Y0u6ugbI/AAAAAAAADOw/_maKtLyJs2E/s1600-h/IMG_0313.jpg"&gt;&lt;img style="WIDTH: 320px; HEIGHT: 240px; CURSOR: hand" id="BLOGGER_PHOTO_ID_5394776697863045554" border="0" alt="" src="http://1.bp.blogspot.com/_NU2dCbqDAWo/St4Y0u6ugbI/AAAAAAAADOw/_maKtLyJs2E/s320/IMG_0313.jpg" /&gt;&lt;/a&gt;&lt;/p&gt;Off course, the first thing which came to my mind was &lt;strong&gt;blackberry muffin&lt;/strong&gt;. I used slightly adapted recipe from my Kitchen Aid Mixer Cookbook.&lt;br /&gt;200g blackberries&lt;br /&gt;225g plain flour&lt;br /&gt;2 tsp baking powder&lt;br /&gt;1/2 tsp salt&lt;br /&gt;175g caster sugar&lt;br /&gt;2 eggs&lt;br /&gt;175ml thin yogurt (buttermilk or milk can be used)&lt;br /&gt;115g butter, melted&lt;br /&gt;&lt;div align="justify"&gt;1 tsp vanilla essence&lt;br /&gt;Put the flour, baking powder, salt and sugar into the bowl. Make a well in the centre and add eggs, yogurt, melted butter and vanilla essence. Beat everything together being careful not to overmix. Gently fold in blackberries and spoon the mixture into prepared muffin tins. Bake in preheated oven to 190 C for 25 to 30 minutes until golden. I try to sample something new and indulge myself. Luckily, people around me are somehow the same. So when our friends came over from Australia, they were brave enough to sample Slovak nation meal "&lt;span style="color:#009900;"&gt;halusky s bryndzou&lt;/span&gt;" - gnocchi with special unpasteurized sheep cheese topped with bacon. After chilly night and foggy morning sunny day followed. &lt;/div&gt;&lt;div align="justify"&gt;I went cycling to &lt;span style="color:#009900;"&gt;Emo Court&lt;/span&gt; - my usual 14 km route - on both Saturday and Sunday and did a fair bit of gardening on Saturday. Come Sunday midday and I was so, so tired that wanted nothing more than nice, uncomplicated seasonal meal in the garden followed by fruity dessert. &lt;/div&gt;&lt;div align="justify"&gt;Even cat was so hot that he slept inside - true Irish cat though, can't stand a bit of hot weather.&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;p align="center"&gt;&lt;a href="http://4.bp.blogspot.com/_NU2dCbqDAWo/Sq_2q1eThtI/AAAAAAAAC3c/rJFQaAW6QIs/s1600-h/Picture+080.jpg"&gt;&lt;img style="WIDTH: 320px; HEIGHT: 245px; CURSOR: hand" id="BLOGGER_PHOTO_ID_5381791295500158674" border="0" alt="" src="http://4.bp.blogspot.com/_NU2dCbqDAWo/Sq_2q1eThtI/AAAAAAAAC3c/rJFQaAW6QIs/s320/Picture+080.jpg" /&gt;&lt;/a&gt;&lt;/p&gt;&lt;p align="justify"&gt;Lunch preparation was the easiest thing: I just threw most of our &lt;span style="color:#009900;"&gt;homegrown vegetables&lt;/span&gt; - such as potatoes, tomatoes, courgettes, red onions into baking dish, tossed in olive oil, rosemary, thyme, salt and pepper and baked it in the oven for about 40 minutes. But there was nothing wrong with the taste, so I turned them into simple tiramisu-inspired pudding.&lt;br /&gt;I put pieces of ladyfingers to the bottom of glass, added stewed nectarines (stew them with a bit of sugar and splash of amaretto) and topped with mascarpone cream (whipped cream with mascarpone, sugar and amaretto). It rains even more often (as if it was possible) and the soil in our garden has gone all soggy. But luckily enough, my courgettes continue to provide me with beautiful produce. For past few weeks I have been enjoying creating different meals with lovely zucchini and anything else I could find in my garden - herbs, chillies, broccoli, fresh peas, runner beans, potatoes, onions and even tomatoes. &lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;One of my favourite dishes is risotto - perfect comfort food for rainy evening. Nice and creamy, with a hint of interesting flavours. Basic risotto recipe is easy to follow and by adding one or two different ingredients you can create lots of tasty meals. Here is one I had yesterday:&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;div&gt;Risotto with courgettes, Parmesan and basil&lt;/div&gt;&lt;br /&gt;1 small onion&lt;br /&gt;2 cloves of garlic&lt;br /&gt;olive oil&lt;br /&gt;150 g risotto rise&lt;br /&gt;1 small glass of white wine&lt;br /&gt;500 ml hot vegetable stock&lt;br /&gt;2-3 courgettes, grated (if very small, sliced)&lt;br /&gt;handful of grated Parmesan&lt;br /&gt;basil leaves (purple basil looks particularly pretty)&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Heat 3 tablespoons of olive oil in the pan. Add chopped onion and garlic and let sweat. When onion is soft, but not coloured, add rise and stir. When rise is all well coated with oil, add wine and let alcohol evaporate.&lt;br /&gt;Then ladle vegetable stock, stirring continuously. Only add more stock when the liquid has been absorbed. Halfway through add courgettes.
